Australia’s most iconic private island welcomed a new era of luxury when IHG opened InterContinental Hayman Island Resort in mid 2019 and we currently have an opportunity for a Director of Restaurant & Bars to lead the Restaurant & Bars function for InterContinental Hayman Island Resort. The re-imagined InterContinental Hayman Island Resort will immerse you in the wonders of working in five-star luxury and offer amazing career and growth opportunities; an opportunity to live in a world heritage area, on the Great Barrier Reef, in a refurbished and exciting Village environment.

Your day to day

In this key leadership role, you will work in partnership with other areas of the Resort to continuously drive and identify revenue, product and guest experience enhancement opportunities. Building on the pre-opening foundations, The Food & Beverage Operation, including in room dinning and events will be yours to drive and grow.

With the overall Restaurant & Bars operational strategy in mind, you will curate beverage programs, and industry and brand defining dining show cases; from pop up and beach events to bbqs and fine dining. You will be at the forefront of driving a diverse food and beverage experience. It will also be critical that you have a strong focus on developing your team to create a positive and productive work environment; building, motivating and upskilling them to ensure they are highly engaged, deliver results and know how to truly deliver luxury in the food and beverage space.

In addition you will monitor and control the Restaurant & Bars Operation in the areas of revenue, expenditure, profitability and performance against budget whilst also being a key driver of the Resort’s branded service delivery across the Resorts Restaurants and Bars and Banqueting.

What we need from you

The ideal candidate will have experience both in hospitality, leadership and working in a large complex hotel with multiple Restaurant & Bar offerings. You will have demonstrated capability in influencing and impacting business strategy and also have strong financial, analytical and business acumen partnered with proven ability to deliver on set targets.

But it is your leadership and capability in growing colleague engagement where you will truly shine. You will be a change agent with the ability to work alongside a team and collaborate with key stakeholders with a sense of urgency. Strategic thinking, the ability to explore new ways of working and an open minded around how we can drive the Resort forward and deliver unrivalled guest journeys will be highly advantageous. Demonstrated ability to work with guests and champion a brand is also a must.

Flexibility to work a varied roster including, late evenings, weekends and public holidays in order to support the operation alongside holding Australian work rights will also be required.

    Senior Master Sergeant (Ret.) Michael Bayerl joined the U.S. Air Force in 1979. Throughout 20 years of active duty, he served as an Air Force Services Specialist and Inspector General for Services-Air Mobility Command. From the moment he started with the USAF Michael was immersed with hospitality experience, starting out in Food in Beverage before working his way through the ranks and functioning in virtually every position available within military restaurants & hotels.

    In 2002, Michael took on a General Manager position at an Air Force Inn, and since that time, he has managed hotel complexes with over 2000+ rooms, on 3 different properties. Michael found his way to IHG when he intentionally took on a role with Army Lodging, knowing that the hotel would soon be privatized into an IHG hotel.

    Today, Michael is the General Manager at IHG Army Hotels on Fort Lee (soon to be re-branded as the World’s largest Holiday Inn Express).
