In this role you will supervise day-to-day shift activities of one or more food and beverage outlet(s) and ensure all staff are properly trained and certified if applicable and have the tools and equipment needed to effectively carry out their job function. You will a ssist in the development and implementation of new menus and local food and beverage marketing programs, and participate in and maintain system-wide food and beverage marketing programs. Responsibilities include you to achieve budgeted revenues, control expenses and labor costs, and maximize profitability within all areas of the food and beverage outlet(s) while assisting in preparation of the annual operating budget. You will m aintain procedures to (1) ensure the security and proper storage of room service inventory and equipment (2) ensure the security of monies, credit and financial transaction, (3) replenish supplies, inventory, uniforms etc. in a timely and efficient manner, and (4) to minimize waste and control costs and participate in taking inventories. You will also make sure all the restaurant equipment is in proper operational condition and is cleaned on a regular basis. Ensure that all restaurant facilities are cleaned and properly stocked according to anticipated business volumes. You may serve as Manager on Duty and perform other duties as assigned.

Your day to day

Supervise all aspects of setup, cleanliness, organization and service to ensure an exceptional guest experience. Direct all FOH service personnel including floor managers and service staff. Assure Restaurant quality standard is adhered to at all times. Contribute to the evolution of Restaurant service, position in the market, and standard of excellence. The Dining area includes but is not limited to the main dining room, bar, Ole, IRD, and poolside deck. Responsible for maintenance of the wine list, specialty cocktail program and beverage program in particular. Act as the liaison between the hotel and the F&B department and work directly with your equal in the kitchen, the Executive Chef/Chef de Cuisine, to deliver information in a way that is useful for decision making in the kitchen.

Tasks and Responsibilities:

Hotel relations:

• Participate in weekly Staff and Guest standard meetings

• Develop solid working relationships with key members of the hotel staff

• Bring forth from Staff and GSI meetings how the information obtained will affect all outlets of F&B (Restaurant, Banquets, Market, IRD)

• Oversee and manage IRD, and Poolside menus, staff, and operations

• Maintain agreed upon Hours of Operation of all outlets

What we need from you

Qualifications include High School diploma or equivalent and at least 1-2 years restaurant management experience in a full service outlet or similar setting. Hospitality Management Degree or some college preferred. Other Information - Alcohol awareness certification and/or food service permit or valid health/food handler cards as required by local or state government agency. You may be required to work nights, weekends, and/or holidays.

Candidate must have at least a high school diploma or GED. Minimum 6 years of previous F&B Management experience is required or College degree in Hospitality Management. Must be able to work well under pressure and be self-motivated. Candidate must have good organizational, time management, and sales skills. Good communication skills—both written and verbal. Position requires sitting, handling, eye-hand coordination, walking, and standing, stooping and kneeling. This position may on occasion be required to assist with set up which may require the lifting, carrying, pulling or pushing of approximately 21—50 pounds.
