Australia’s most iconic private island welcomed a new era of luxury when IHG opened InterContinental Hayman Island Resort on 1July 2019; an ultra-luxury private island resort in the heart of the Whitsundays. And now we have a rare opportunity for a Director of Kitchens to join the team on the island and be at the forefront of all things culinary across the Resort; the grand palette of innovation and extraordinary local flavour.
Your day to day
Reporting to the Resort Manager, you will work in partnership with other areas of the Resort to continuously drive and identify revenue, product and guest experience enhancement opportunities. The Culinary Operation, including in room dinning and events will be yours to drive and grow in partnership with Director of Restaurants & Bars.
With the overall food & beverage operational strategy in mind, you will curate culinary programs and industry defining dining showcases; from pop up and beach events to bbqs and re fined dining. You will have natural affinity for innovation and menu engineering to be at the forefront of driving a diverse and exciting culinary experience for the resort’s guests. It will also be critical that you have a strong focus on developing your team to create a positive and productive work environment; building, motivating and upskilling them to ensure they are highly engaged, deliver results and know how to truly deliver luxury in the culinary space.
In addition you will monitor and control the Culinary Operation in the areas of, expenditure, profitability and performance against budget whilst also being a key driver of the Resort’s branded service delivery across the Resorts Restaurants and Bars and Banqueting.
What we need from you
The ideal candidate will have experience both in hospitality, leadership and working in a large complex hotel with multiple Restaurant, Bar and Banqueting offerings. You will have demonstrated capability in influencing and impacting business strategy and exposure to working in an innovative culinary environment with ongoing concept design and menu engineering. You will be a change agent with the ability to work alongside a team and collaborate with key stakeholders; invoking the ability to explore new ways of working around how we can drive the Resort forward and deliver unrivalled culinary experiences.
Demonstrated ability to work with guests and champion a brand alongside strong financial, analytical and business acumen partnered with proven ability to deliver on set targets will also be highly advantageous. You must hold the relevant rights to work in Australia.
