You will be a motivated person with a positive attitude and an interest to progress your culinary career, develop your skills, and expose yourself to varying styles of kitchen operations and different styles of pastry cuisine. You will be responsible for driving the pastry kitchen and the creation of a wide range of quality breads, pastries and other baked goods whilst exercising your knowledge of hygiene and safety and maintaining our high guest service standards.

Reporting to the Executive Chef, you will be involved in the daily on site preparation and production of all baked goods required across all Food & Beverage Outlets and functions ranging from various types of breads to pastries, desserts, cakes, flans and pies. To achieve results, you’ll be self-motivated and will perform your role with a sense of urgency; you will be creatively focused and have a genuine passion for baking and working with pastries.

You will be exposed to, and work in a large kitchen alongside a strong culinary leadership team with strong culinary skills and quality offerings. Creating a variety of cookery for breakfast, lunch, dinner and tea break services, you will be contributing to a la carte, bistro, and function style production. You will also supervise the pastry kitchen operation, including food preparation and quality, physical maintenance and inventory functions to ensure hotel quality standards, revenue goals and food and supply costs are met. You will have a full working knowledge and capacity to supervise, correct and demonstrate all duties and tasks to the required standard. You will have extensive knowledge of new culinary trends, having thorough understanding of all food and beverage items in the menu and the ability to recommend food and beverage combinations to produce a consistent and high quality product.


Ideally, you will have previous experience as a Pastry Chef or other similar senior roles with a formal qualification. You will have experience in delivering a high level of food quality in a hotel or restaurant environment and preferably will have worked with food safety systems such as HACCP. It is expected that you will be proactive towards change & improvement and participate in resort committees and have an awareness of reporting systems such as hazards and incidents.

You will have the flexibility to work various shifts including evenings, overnights, weekends and public holidays across a seven day roster. You must hold a current Australian driver’s license and also meet the legal requirements to work in this country.
