IHG Chef de Cuisine - Spanish Grill and Tapas Restaurants - InterContinental Perth in Perth, Australia
The InterContinental brand is returning to Perth in 2017. InterContinental Perth will be a 240-room design orientated hotel in the heart of Perth s CBD. Focused on corporate and transient market it will bring the InterContinental personalised service to life.
The five F&B concepts are innovative, fresh and unique which will be market leaders in the Perth restaurant scene.
The Chef de Cuisine - Restaurants will report directly to the Director of Food and Beverage,with atargeted start in May 2017 in order to be part of the pre-opening project.
The Chef de Cuisine - Restaurants will specifically oversee culinary for all three ground floor outlets:
- Tapas and Raw Bar- on the buzzing and lively corner of Hay & King St and across from His Majesty's Theatre this venue will open out to the street and will be right in the heart of the action of our CBD. The vision and feel will be hip but approachable, interactive, independent and authentic Spanish cuisine with locally supplied produce.
- Spanish Grill- grill and charcoal cooking with theatre style cooking, honest and sophisticated but not fine dining, daily menu
- Grab and Go Takeaway- concept and feel will be independent, hip & arty, local, unexpected.
This role will be responsible to bring to life the the management, concept delivery, culinary team, profitability and efficient operation of the three ground floor outlets.
Another colleague, the "Chef de Cuisine - Hotel" will be responsible for Loft Bar, Meeting Suites, Room Service, Pastry, Breakfast, and Club InterContinental Lounge.
With exciting new concepts, we are looking for someone that can deliver a product and service that will lead the market; manage culinary operations to ensure quality service and standards while delivering a guest experience that is unique; and ensure compliance with all federal, state and local regulations concerning health, safety, or other requirements.
Ideally, you'll have qualifications in CulinaryArts with minimum 3 years related senior leadership experience in a modern and successful venue or multi-venue environment.
As this roles leads the culinary team day to day, in partnership with the other Chef de Cuisine, proven experience in working as a partner to other senior chef's would be advantageous. As will experience leading a HACCP approved kitchen.
Experience in modern and authentic Mediterranean or Spanish cuisine is necessary.
