Our beautifully refurbished dining spaces provide a blank canvas for a highly engaged, innovative and passionate Executive Chef to showcase Hunter Valley's local ingredients to the world.

In partnership with out Hotel Manager, this role will be responsible for managing the daily kitchen operations of our Food & Beverage outlets including Locavore Restaurant, Epoche Lounge Bar, The Conservatory, In-Room Dining and Conference and Events. This will involve rewriting of menus (both Conferencing and Restaurant), establishing strategy and direction for the Food product, leveraging on and adding to the local produce grown on site and building a long term plan to attain a coveted Chefs Hat.

We require a strong kitchen leader with the ability to strategically plan and operationally execute high quality and speciality food offerings. You will inspire your colleagues and have the genuine care to train and develop a high performing team to strive for continued excellence and financial success for the department. Overseeing a smooth operation that adheres to local health, safety and other compliance concerns will be second nature for you, and you will be a true brand and local Hunter Valley ambassador in everything you do!

Qualifications

Our must haves:

  • A formal Commercial Cookery Certification

  • A minimum 3 years' experience as a Head Chef, with demonstrated performance in a hotel environment, preferably in the luxury market

  • Strong skill base and experience in a la carte, banqueting and buffet food production

  • "Hands on" style, who understands and can deliver on the expectations of a modern and contemporary guest experience

  • Ongoing commitment to quality and providing a truly unique experience to our guests

  • Possess great attention to detail

  • Excellent time management & communication skills

  • A working knowledge and understanding of HACCP procedures, including the training of colleagues in procedures

  • High standard of personal presentation

  • The flexibility to work various shifts on a rotating roster including evenings, weekends and public holidays

  • You must meet the legal requirements to work in this country
