(176 residence, 360 rooms, 7 F&B outlets, one Events Centre)
As Chef Garde Manger, you are responsible to:
Supervises and participates in the preparation of cold sauces and dressings, appetizer and salads, hors D oeuvre and canapes, display platters and arrangements of Cold Buffet and all cold food items in accordance with established recipe cards and methods. Checks daily function sheets and daily menu to ensure appropriate production level.
Designs and prepares Ice Carvings and artistic decor pieces.
Ensures that all cold food items are prepared in attractive and appetizing manner.
Supervises and participates in Buffet Set up and decoration.
Samples all foods, sauces, dressing on regular basis to ensure established standards are maintained.
Ensures during meal periods that buffet table is kept replenished and attractive for duration of service.
Ensures that portion control policy/standard plating instruction are adhered to.
Ensures that cold foods, sauces, dressing left over from Buffet are stores accordingly to established procedures.
Conducts On the Job Training as appropriate
Ensures Gardemanger section is kept in clean and orderly fashion.
Ensures that all equipment in the Gardemanger section is correctly handled and maintained.
Participates in menu planning as appropriate.
Establishes and maintains effective employee relation.
Ensures that BHR Hygiene and Sanitation standard are attained in his section.
Coaches employees in his section the Clear as you Go method of working.
Complies with Hotel s Health and Safety Policy.
Performs related duties and special projects as assigned.

Physically fit able to work irregular hours depending on the business level
Report to Executive Sous Chef
Good in English communication
Proven culinary education (preferably Apprenticeship)
5 Star Hotel Experience in international branded hotel
Excellent Team player and motivator of Team member
Strong Coordination with Restaurant Manager & related Department in promotions and Marketing
Familiar and experienced with Food Safety Management system.
