Duties and responsibilities
Writerequisitions of food in advance in order to ensure uninterrupted operation andget the approval from Sous Chef or Executive Chef.
Haveknowledge of all menu items in regards to ingredients, method of cooking andpresentation.
Make surethat all dishes are uniform and that established portion sizes are adhered to.
Beresponsible for constantly maintaining a high standard of food preparation bychecking it for taste temperature and visual appeal.
Make surethat all refrigerators are clean and tidy and checks constantly the stored fooditems on freshness to prevent the use of spoiled or contaminated products inany phase of food preparation.
Makesuggestions to the Executive Chef or Sous Chef concerning improvements whichwould lead to make more satisfied customers and/or increase volume of businessor profit.
Make surethat his set up mise-en-place are always ready, so that he may give quick,efficient and quality service.
Followdetailed instructions given to him by the Executive Chef or Sous Chefs at all timesand brief the staff daily according to information s necessary.
Recognised hotel diploma and at least 1year experience working in the same position within a 5* hotel, detailedknowledge of food technical skills is essential for this role as well as aproven track record in launching new concepts and promotions, training anddeveloping staff. It is also essential that you have a good command of theEnglish language (verbal and written) and knowledge
